Thai Saffron Rice
Description
A little taste of Thai. I like to serve Saffron Rice with grilled fish.
Ingredients
- 2 cups canned coconut milk
- 1/8 teaspoon saffron
- 1/4 teaspoon sugar
- 2 cloves
- 1 1/2 inch sticks of cinnamon
- 1/4 teaspoon salt
- 1 cup long or short grain rice
Methods/steps
- Pour coconut milk into a medium saucepan. Stir in remaining ingredients. Bring to a boil. Cover tightly and cook on low for 15-20 minutes or until liquid is absorbed. Remove clove and cinnamon stick before serving.
