Zucchini Bread
My mothers (Ella Senise) recipe for Zucchini Bread. I love warmed Zucchini Bread with dot of butter for breakfast.
Ingredients
- 3 eggs
- 2 cups sugar
- 2 cups shredded zucchini (about 3 medium)
- 1 cup oil
- 2 teaspoons vanilla
- 3 cups all-purpose flour
- 1/2 cup chopped nuts
- 1 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
Methods/steps
- Preheat oven to 325F. Grease (crisco is best) bottoms only of two 9x5 pans.
- In a big bowl, beat eggs until a wire whip until foamy. Stir in sugar, zucchini, oil and vanilla. Add remaining ingredients and blend well by hand. Do not use a mixer.
- Divide batter equally between 2 pans. Bake at 325F for 50 or 60 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 10 minutes, remove from pans. Cool on wire rack.
