Welsh Rabbit
Description
As a kid I always wondered where the "rabbit" was! This was also my father in law's hangover remedy but he called it "cheese toast".
Ingredients
- 1 cup mild grated cheese diced in small pieces
- 1 tablespoon butter
- 1/2 teaspoon dry mustard
- Cayenne pepper to taste
- 1 egg, slightly beaten
- salt to taste
- 1/2 cup beer
- 4 slices toast
Methods/steps
- Combine cheese, butter, mustard and cayenne pepper in a double broiler. Cook over low heat, stirring, until cheese is melted.
- Beat a little of the hot cheese mixture into the egg, return the egg-cheese mixture to the pan. Add salt and beer and cook 1-2 minutes until very hot.
- Serve over toast.
