Ultimate Mashed Potatoes
Description
Think loaded baked potato but better.
Ingredients
- 4 strips bacon
- 2 pounds Russet potatoes
- 2 whole cloves garlic
- 1 9 ounce package fresh spinach
- 1/2 cup heavy cream
- 2 Tablespoons butter (or more!)
- Cheddar Cheese
Methods/steps
- Peel and cut potatoes into chunks. Boil potatoes with whole cloves of garlic in salted water until tender.
- While potatoes are cooking place bacon in skillet over medium-high heat and cook until crisp. Drain on paper towels.
- When potatoes are tender stir in spinach to wilt. Drain potatoes, garlic and spinach. Return to pot and cook another couple minutes until all water evaporates. Stir occasionally.
- Add cream, butter and cooked bacon. Mash potatoes and season with salt and pepper to taste.
- Top hot mashed potatoes with cheddar cheese.
