Sullivan's Island Rum Cake
Description
Very easy to make rum cake recipe. Semi-homemade.
Ingredients
- 1 package Duncan Hines Butter Cake Mix
- 1 package 3 1/2 ounce vanilla pudding
- 1/2 cup white rum
- 1/2 cup water
- 1/2 cup vegetable oil
- 4 eggs
- 1 cup pecans, chopped
- 1 cup sweet coconut
Glaze:
- 1 stick melted margarine
- 1 cup sugar
- 1/4 cup white rum
- 1/4 cup water
Methods/steps
- Preheat oven to 325F
- Grease a 12 cup nonstick Bundt cake pan.
- In a mixing bowl combine mix, pudding mix, rum, water, vegetable oil and eggs. Beat 4 minutes at medium speed.
- Press the nuts and coconut in the bottom of the greased pan. Gently pour the batter over the nuts and coconut.
- Bake for 50-60 minutes.
- Meanwhile, make the glaze: Combine the glaze ingredients in a saucepan. Boil for three minutes. Pour over hot cake while still in pan.
- Remove cake from the pan after it has cooled.
