Stuffed Green Peppers
Description
Aunt Mary's Green Pepper recipe. As a child she made them every time I visited. It actually didn't go over all that well with my cousins who were not green pepper fans
Ingredients
- 4 medium green peppers, seeded
- 3 tablespoons olive oil
- 1 onion, finely chopped
- 1 pound ground pork (lamb, veal or beef can be used)
- 2 tomatoes peeled and chopped
- 2 tablespoons parsley
- 1 tablespoon chopped fresh basil (dried can be substituted)
- Salt
- 1/4 teaspoon freshly ground pepper
- small can tomato sauce
Methods/steps
- Preheat oven to 350.
- Oil a shallow baking dish
- cook peppers in boiling water for two minutes, drain and set aside.
- Heat the oil in a skillet and add the chopped onion. Cook stirring until soft. Add meat and cook for 5-10 minutes until no pink remains.
- Add the tomatoes, parsley, basil, salt, pepper to the meat and onion mixture. Combine well.
- Stuff each pepper with the meat mixture. Pour tomato sauce over the top.
- Bake for about 40 minutes.
