Spinach and Cheese Stuffed Salmon
Description
Not only do you get the good Omega 3 fatty acids from the Salmon but you get the calcium benefit from the cheese.
Ingredients
- 6 - 6 ounce salmon filets (use Alaskan)
- 1 package frozen chopped spinach
- 1/4 cup light cream cheese
- 1/4 cup goat cheese
- 1/8 teaspoon tumeric
- 4 slices of pineapple
- salt and pepper to taste
Methods/steps
- Pre-heat oven to 350F
- Place spinach in a collander to thaw and drain. Press all the liquid out. (I use the back of a spatula to press spinach dry)
- Place spinach in a small bowl with the cream cheese, goat cheese and tumeric. Season to taste.
- Cut one 3/4 inch deep, 2 inch long slit down the center of the top side of each salmon filet.
- Fill each slit with the spinach and cheese mixture.
- Brush a baking sheet with olive oil. Lay the pinapple flat inside the baking sheet. Place the filets on top of the pinapple. Sprinkle with salt and pepper.
- Bake for about 20 minutes.
