Spanish Eggplant
Description
Eggplant and tomato can used as a side dish or vegetarian entree.
Ingredients
- 1 medium eggplant
- 1/4 cup onion, minced
- 1/2 cup green pepper, minced
- 1/2 cup salad oil
- 6 medium tomatoes
- 2 1/2 teaspoons salt
- 1/2 teaspoon sugar
- Parmesan cheese, grated
Methods/steps
- Pare and dice eggplant. Saute eggplant with onion and green papper in the oil until lightly browned.
- Peel and dice tomatoes coarsley. Add tomatoes, salt and sugar to the eggplant mixture. Cook 5 minutes or until well heated.
- Serve with Parmesan cheese.
