Russian Potato Salad (Salat Olivier)
Description
I love Russian Potato Salad. Russians dice all ingredients very small.
Ingredients
- 6-8 medium potatoes, boiled and peeled
- 2 hard-boiled eggs
- 1 cup chopped ham (optional)
- 1 cup green peas, canned
- 1 cup carrots, canned
- 4 pickles, finely chopped
- 2 scallions, finely chopped
- 3 tablespoons lemon juice
- 5 tablespoons mayonnaise (some like a little more, okay to add to taste)
- salt and pepper to taste
Methods/steps
- Cut potatoes and eggs into cubes.
- In a large bowl, gently toss potatoes and eggs with peas, carrots, pickles and scallions.
- Mix remaining ingredients in a small bowl to make dressing.
- Pour dressing over salad. Gently toss.
- Add more mayo if you want a creamier dressing.
