Roast Lamb

Ingredients
- 4 pound boneless leg of lamb.
- 2 Tablespoons olive oil
- 2 Tablespoons fresh rosemary leaves, chopped
- 4 cloves garlic, minced
- 3 teaspoons freshly grated lemon zest
- salt and fresh ground pepper
Methods/steps
- Combine ingredients, rub all over lamb.
- Cook uncovered at 325F until the internal temperature reaches 155F. Approximately 2 hours.
- Let meat rest for 20 minutes to let the juices flow.

Serve with mint jelly
