Quinoa Medley
Easy one pot dinner.
Ingredients
- 1 1/2 cups quinoa (rinsed well and drained)
- 3 cups water
- 1 can (15 ounce) diced tomatoes
- 1 can kidney beans (drained and rinsed)
- 1 can corn (drained)
- 1 can (4 ounce) green chilies
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
Methods/steps
- Bring water to a boil. Add the rinsed quinoa. Cover, simmer on low for 15 minutes. Stir in remaining ingredients. Cook, stirring until heated thoroughly.
Additional Tips
I serve this with a fruit salad.
