Quinoa and Chick Peas
Healthy Quinoa Recipe. Quinoa supplies all eight amino acids needed for a complete protein.
Ingredients
- 0live oil
- 1/4 cup chopped onion
- 2 cloves garlic
- 1 cup quinoa (rinsed and drained thoroughly)
- 2 cups vegetable broth
- 1 can chickpeas (garbanzo beans)
- 1/2 cup spinach, chopped
- 1 teaspoon basil
- 1/2 teaspoon cumin
- soy sauce to taste
Methods/steps
- Saute the onion in garlic over medium heat in a large pan.
- Add the quinoa to the pan and lightly toast it for about 3 minutes.
- Add the broth and bring to a boil. After broth is at a boil add the rest of the ingredients. Lower the heat and simmer for 15-20 minutes or until the liquid is gone.
Additional Tips
Uncooked Quinoa has a bitter coating and therefore must be rinsed and drained thoroughly before cooking it.
