Quick Cheese Grits with Bacon and Chives
Description
This recipe can be for breakfast, lunch or dinner. For lunch or dinner just add your favorite seafood, such as scallops or shrimp.
Ingredients
- 1 1/3 cup milk
- 1 1/3 cup water
- 1 tablespoon butter
- 2/3 cup grits
- 3 slices of velvetta cheese
- 4 slices of bacon
- dried or fresh chives
Methods/steps
- Cook bacon until done, drain and set aside to cool.
- Mix your milk, water and butter together and bring it to a boil. Stir in the grits.
- Cover and simmer the mixture on low, stirring occasionally, approx. 5-7 minutes.
- While the grits are simmering, chop the bacon in small bits.
- When the grits get to the consistency that you desire, remove from the stove.
- Stir in the cheese (until covered with the grits) and set back on stove covered for about a minute in order for the cheese to melt.
- Remove from stove and stir well.
- Ladle into bowls and top with chives.
- Salt and pepper as desired.
Additional Tips
This recipe can also be used with microwavable grits (follow the directions on the packet) and add the additional ingredients if you are in a hurry.
