Pickled Tomato Relish
Description
Pickled tomato relish goes well with beef or poultry.
Ingredients
- 6 medium Roma tomatoes
- 1/2 cup seasoned rice vinegar
- 2 Tablespoons brown sugar
- 1/2 teaspoon coriander seed
- 1/2 teaspoon cumin seed
- 1/2 teaspoon mustard seed
- 1/8 teaspoon cayenne
Methods/steps
- Peel tomatoes by dropping them in broiling water for 5 seconds. Lift out and cool. Pull of the peel. Cut tomoatoes in small pieces
- In a pan over medium heat add the remaining ingredients. Bring to boil. Pour over tomatoes.
- Let tomatoes stand for 30 minutes, stiring gently every 5 minutes. Serve warm or at room temperature
Additional Tips
Can be made ahead and chilled for the next day.
