Peach Topped Neufchatel Cheesecake
Description
When the fresh peaches hit the market be ready to make this delightful cheesecake.
Ingredients
- 12 ounces Neufchatel Cheese (room temperature)
- 1/3 cup plain yogurt
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 3 egg whites
- 1 egg
- 1 (6 ounce) ready made graham cracker crust
- 1 Tablespoon honey
- 1 Tablespoon fresh lemon juice
- 2 peaches
- 2 teaspoons mint, finely chopped
Methods/steps
- Preheat oven to 325F
- Beat cream cheese, yogurt, sugar, vanilla extract and almond extract until smooth.
- Add egg whites and egg, beat until just smooth. (Do not over mix)
- Pour into crust. Bake until center is almost set, about 35 minutes.
- Remove from oven, place on wire rack to cool. Refrigerate for three hours.
For the topping:
- Peel and dice the peaches. In a medium bowl wisk the honey and lemon juice. Add the peaches and and toss just enough to mix.
- Top each slice of cheesecake with peach mixture. Garnish with mint.
