Orzo Pilaf with Eggplant Tomato Sauce
Easy Vegetarian Meal or side dish. Recipe submitted by Aileen Allen
Ingredients
- 2 Tablespoons butter (or olive oil)
- 1 1/4 cup orzo
- 3 cups vegetable broth
- 1/2 cup grated cheese (optional)
- 1/4 cup butter
- 1 clove garlic, crushed
- 2 cups eggplant, finely chopped
- 1 can (8 ounces) tomato sauce
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 1/2 cup chopped onion
- 1/2 cup water
Methods/steps
- Melt butter in saucepan. Add orzo until lightly browned. Add broth to orzo. Bring to boil. Cover and simmer for 20 minutes or until liquid is absorbed. Serve with grated cheese and tomato sauce
Eggplant-Tomato Sauce:
- Melt butter in saucepan. Add garlic and saute with eggplant and onion for 5 minutes. Add tomato sauce, oregano, salt, sugar and water. Simmer uncovered for 20 minutes, stirring frequently.
- Serve over orzo
