Mini Salmon Cakes
Mini Salmon Cake Appetizers Recipe.
Ingredients

1 can (14.75 oz.) red salmon, Alaskan sockeye, drained, picked through and flaked

1 can (11 oz.) Mexi-corn mix, drained and rinsed

1/4 cup minced red onion

2 egg whites
-
1 cup fresh breadcrumbs

1 Tablespoon Cajun seasoning
Methods/steps

In a bowl, gently fold all ingredient together. Shape mixture into 1" balls. Flatten. Transfer to greased baking sheet.

Cover and chill 3 hrs. or overnight.

Heat oven to broil. Uncover salmon cakes and broil in top third of oven 5 min or until golden and crispy.

Top with your favorite sauce or sour cream.
