Mediterranean Rice Salad
Description
Rice Salad both flavorful and colorful. The perfect dish for a picnic. Total prep and cook time is about 45 minutes.
Ingredients
- 2 cups rice
- 1/4 cup fresh lemon juice
- 1/2 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh oregano
- 1/4 teaspoon fresh ground pepper
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1 yellow bell pepper
- 1 green pepper
- 1 small cucumber, finely chopped
- 1 medium tomato, finely chopped
- 1/2 cup green onion, chopped
- 1/2 cup kalamata olives, pitted and chopped
- 1/2 cup chopped parsley
- 1 cup crumbled feta (optional)
Methods/steps
- Cook or steam rice according to package directions. It needs to be a little firm. Set aside to cool, fluff with fork place in large bowl.
- Add olive oil, garlic, oregano, pepper, salt and red pepper flakes to a jar with a lid. Shake well.
- Add peppers, cucumber, tomato, green onion, olives, to the rice. Give the dressing another shake and add to the rice and veggie mixture.
