Marchand de Vin Sauce Recipe
Description
Marchand De Vin Sauce is excellent served over tenderloin, poached eggs or broiled chicken.
Ingredients
- 1/2 pound fresh mushrooms
- 4 Tablespoons butter
- 1 1/2 cups beef broth (hot)
- 1/2 cup green onions, minced
- 1 large clove garlic, crushed
- 1/2 cup dry red wine
- 1/3 cup beef broth
- 2 Tablespoons flour (browned in oven)
- 2 dashes Tabasco
- 1/3 cup ham
- juice of 1/2 lemon
- salt and freshly ground pepper to taste
Methods/steps
- Saute mushrooms in 2 tablespoons butter. Add 1/2 cup broth. Simmer covered for 10 minutes.
- In another pan, saute green onions in 2 tablespoons of butter until transparent. Add garlic, 1 cup broth and wine. Cover and simmer 20 minutes.
- Combine 1/3 cup broth and flour. Stir into onion mixture. Add Tabasco. Bring to a boil.
- Remove from heat and add mushroom mixture.
- Add ham, lemon juice, salt and pepper.
- Serve warm
Additional Tips
Keep brown flour on hand for thickening sauces, gravies and soups. To make brown flour, heat in 325F oven for 30 minutes or until lightly browned, stirring occasionally. Store in airtight container for future use.
