Looz Shorba
Traditional Middle Eastern Almond Soup.
Ingredients
- 2 Tablespoons butter
- 1/2 cup chopped onions
- 2 Tablespoons flour
- 1 quart boiling chicken stock
- 1/2 cup ground blanched almonds
- 1/2 cup heavy cream
- Salt and freshly ground white pepper to taste
Methods/steps
- Melt the butter in a large saucepan, add the onions and cook until soft. Do not brown.
- Stir in flour. When blended slowly add the boiling stock, stirring briskly. Let simmer for a few minutes. Stir in the ground almonds. Simmer for 20-25 minutes.
- Stir in the cream and heat
- Season with salt and pepper to taste.
Additional Tips
Blanched almonds are almonds with the skins removed. To blanch almonds:
- Pour boiling water over the almonds, just enough to cover
- Let sit for a minute or so.
- Drain, rinse under cold water
- Pat dry, remove skins
