Laniana Lewaka's Citrus Wahoo
Description
Citrus Wahoo Recipe from the beautiful Beqa Resort in Fiji. Recipe provided by Head Chef, Laniana Lewaka.
Ingredients
- 4 Wahoo filets (approx 1 1/2 pounds)
- 3 fresh lemons
- 3 fresh limes
- 1 cup fresh cilantro
- 5 cloves of garlic, crushed
- 1/4 cup olive oil
- 1/4 white vinegar
- 3 oranges
- 2 onions finely chopped
- 1 stick of butter (1/4 cup) melted
Methods/steps
- To make the marinate squeeze lemons and limes. In a medium bowl add the juice, cilantro, garlic, olive oil and vinegar. Mix until blended. Place fish in a 9x13 pan. Pour the marinade over the fish, marinate for 2 hours.
- Make the sauce: Juice the oranges. Add to the onion and melted buttIer. In food processer blender, blender until pureed.
- Grill Wahoo filets until flaky. While filets are cooking warm sauce over low heat.
- Place fish on a plate, pour sauce over fish. Garnish with cilantro.
