I had the pleasure of trying this sweet potato recipe recently and I have to say it is the BEST sweet potato recipe I have ever tried. It is also easy to make.
- 5 med. sweet potatoes
- 1/2 cup sugar ( you can decrease)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/2 cup butter or margarine
- I put in a pinch of cinnamon
Topping:
- 1/3 cup flour
- 1 cup chopped pecans or walnuts (I use a little more)
- 1/3 cup butter or margarine
- 1 cup brown sugar
Cook potatoes in a 375 degree oven until soft. Cool, peel and place potatoesin large mixing bowl. Add sugar, eggs, vanilla, milk and butter (or margarine). Mix on medium speed until uniform and fluffy. Spread in bottom of casserole dish (approximately 11x13).
Topping: Mix flour, butter(or margarine) and brown sugar together with fork or food processor. Mix in the nuts. Crumble topping over potato mixture and bake at 350 degrees for 45 minutes until hot and bubbly.
