Garlic Sesame Cod
Cod with an Asian twist. You will love this Cod Recipe.
Ingredients
- 4 sheets (12x18" each) Aluminum Foil
- 4 (5 to 6 oz. each) Cod fillets, thawed if necessary
- 1/4 cup soy sauce
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 3 cups fresh sugar snap peas or snow peas
- 2 cups sliced mushrooms
- 2 medium carrots, sliced
- 2 teaspoon toasted sesame seeds
Methods/steps
- Preheat oven to 450°F or preheat grill to medium-high.
- Spray foil with nonstick cooking spray. Center one Cod fillet on each sheet of aluminum foil.
- Combine soy sauce, oil, garlic and red pepper flakes; spoon one tablespoon over each fillet. Top with vegetables. Spoon remaining sauce over vegetables. Bring up sides of foil and double fold. Double fold ends to form a packet, leaving room for heat circulation inside packet. Repeat to make four packets.
- Bake 15 to 18 minutes on a cookie sheet in oven or grill 9 to 11 minutes on a covered grill. Sprinkle with sesame seeds before serving.
