Ingredients
- 1 pound carrots, thinly sliced
- 1/4 cup golden raisins
- 1/4 cup margarine
- 3 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1/4 teaspoon ground ginger
- 1/4 cup sliced almonds
Methods/steps
- Cook carrots, covered, in boiling water for 8 minutes, drain.
- Place carrots into a 1-quart baking dish.
- Stir in raisins, margarine, sweetener, lemon juice, and ginger.
- Bake uncovered for 35 minutes.
- Top with almonds before serving.
