Duck Breast Rumaki
Description
Use duck breast in place of the chicken livers. Submitted by Mack Tennes, Virginia
Ingredients
- 2 boneless breast halves from 1 wild duck
- 1/2 cup sake
- 1 Tablespoon soy sauce
- 1 Tablespoon peanut oil
- 1 teaspoon fresh ginger
- 8-10 slices of bacon, cut in half
- 16-20 whole water chestnuts
Methods/steps
- Cut each breast half into 8-10 pieces, about 1 inch across.
- In a small bowl mix sake, soy, oil and ginger; Add duck to mix, toss to cover. Marinate on the counter for 1 hour.
- Put one duck piece and one water chestnut of a piece of bacon. Wrap bacon around the duck and water chestnut. Secure with a toothpick. Repeat with the rest of ingredients.
- Broil 3-4 inches from the broiler until bacon is crisp. Turn once.
