Crawfish Cornbread
Description
I know Crawfish Cornbread sounds a little strange..don't knock it till you try it. If you don't want to use crawfish substitute ground meat or sausage.
Ingredients
- 1 pound crawfish or ground meat or sausage
- 2 cups yellow cornmeal
- 3 eggs
- 1 can cream corn
- 1 1/2 cups grated cheddar cheese
- 3/4 cup green onions
- 2 jalapeno peppers chopped fine
- 1 onion chopped fine
- 1/2 cup green bell pepper
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup oil
- 3 teaspoons baking powder
- 1 cup milk
Methods/steps
- Preheat oven to 400 degrees.
- Sautee onions and green peppers in a small amound of butter until onions are transparent. Add jalapeno peppers and set aside.
- Mix all other ingredients except crawfish. Add in onions and peppers. Stir in crawfish or meat. Pour into a lightly greased 9x13 pan and bake for 35-40 minutes
