Cornish Hens with Currant Jelly
Description
Recipe for Cornish Hens with currant jelly, sherry glaze.
Ingredients
- 4 Cornish hens
- 4 Tablespoons butter or margarine
- 1 cup red currant jelly
- 2 Tablespoons vinegar
- 2 teaspoons mustard
- 2 Tablespoons sherry or Port wine
Methods/steps
- Wash Cornish hens inside and out. Dry cavity and sprinkle with salt and pepper.
- Rub outside of hens with butter, sprinkle with salt and pepper.
- Place hens in a roasting pan breast side up. Bake at 425F for 15 minutes
- Add remaining ingredients to a small saucepan over medium heat. Cook and stir until heated and smooth. Baste hens with sauce and cook for an additional 20 minutes until browned and glazed.
Additional Tips
I serve this with wild rice and brussel sprouts.
