Cornish Hens with Apples
Aunt Sarah's recipe for Cornish Hens.
Ingredients
- 2 Cornish hens
- salt and pepper
- 1/2 teaspoon celery salt
- 2 Tablespoons butter
- 2 Tablespoons olive oil
- 6 tart cooking apples, peeled, cored and finely chopped
- 1/4 cup heavy cream
Methods/steps
- Season the hens inside and out with salt, pepper and celery salt.
- In a heavy oven proof skillet or dutch oven add butter and oil. Brown hens on all sides.
- Remove the hens and cook apples in the remaining fat until soft.
- Place hens on the apples. Pour cream over the hens.
- Cover and place in oven. Cook for 30 minutes at 375 or until tender.
Additional Tips
You can cook this over low heat on top of the stove. I just prefer to cook in the oven.
