Chicken with Roast Pears and Cranberries
Description
aka Lorna's Amazing Chicken.
Ingredients
- 2 1/2 cup wild rice
- 2 1/3 cup apple juice
- 1 1/2 cup lchicken broth
- 1 tbsp olive oil
- 2 lb boneless skinless chicken breast halves, cut into 1" cubes
- 1 cup sliced green onions
- 4 small ripe pears, cored and sliced
- vegetable cooking spray
- 1 cup dried cranberries
- 1 Tablespoon sugar
- 3/4 teaspoon salt
- 3/4 teaspoon ground cinnamon
Methods/steps
- Combine the rice, apple juice and chicken broth in large saucepan. Bring to a boil then reduce heat to simmer. Cover and simmer 20 minutes.
- Heat oil in a large skillet over medium heat. Add chicken and green onions. Saute until the chicken is done and no longer pink inside.
- Slice pears and arrange on a baking sheet sprayed with vegetable oil. Bake at 450F for about 10 minutes or until pears are tender.
- Combine all ingredients including rice and chicken and toss gently.
