Chicken Soup
Description

Ingredients
- 1 whole chicken 1 medium yellow onion, chopped
- 2 stalks of celery, chopped
- 4 cloves of garlic, cut in half
- 2 bay leaves
- 10 whole peppercorns
- 1 whole bunch of dill, stripped from the stem
- 4 medium carrots, chopped
- 2 parsnips, chopped
- Salt to taste
Methods/steps
- Place chicken in a large stockpot and fill with water until chicken is covered by a half inch. Add in the onion, celery, garlic, bay leaves and peppercorns and dill.
- Cover the pot and simmer on low for 3 hours. Check the water level every half hour and add more if necessary. After cooking for three hours, pull the chicken out of the stock and place in a pan. Add the carrotts and parsnips to the pan and cover again. Cook until carrotts parsnips are tender.
- Remove the meat from the bones and discard the bones.
- Cut or tear the meat into bite-sized pieces. Put the chicken back into the pot. Add salt and pepper to taste.
Additional Tips
I like noodles in my soup, you can add rice or egg noodles to the pot.
