Chicken and Basil Penne Pasta

Ingredients
- 16 oz Penne Rigate Pasta
- 4 Tablespoons olive oil
- 1 can (14.5 ounces) diced tomatoes
- 1/3 cup chopped basil leaves
- 1 lb. cooked chicken (for quick dinner buy precooked chicken )strips)
- 2 Tablespoons capers
- 1 1/2 cups Mozzarella cheese shredded
- salt and ground pepper to taste
Methods/steps
- Cook pasta according to package directions. Drain
- Heat olive oil in large skillet over medium heat.
- Add garlic and cook for 1 minute
- Add tomatoes and basil; cook 2 minutes.
- Add chicken; simmer for 5 minutes.
- Add capers.
- Toss with pasta and Mozzarella cheese.
- Season with salt and pepper to taste.
