Caribbean Shrimp Wraps

Ingredients
- 2 cups hot, cooked rice1 tablespoons chopped onion1 Tablespoon chopped Anaheim or other mild pepper1 clove garlic, minced2 teaspoons vegetable oil12 ounces peeled medium shrimp1/2 teaspoon grated lime peel1/2 teaspoon thyme leaves, crushed1/8 teaspoon ground black pepper1/8 teaspoon cinnamon1-1/2 cups seedless grapes, cut in half2 teaspoons fresh lime juice1/8 teaspoon bottled hot pepper seasoning1/2 cup mango chutneySalt4 flour tortillas
Methods/steps
- Cook rice according to package instructions.
- Sauté onion, chilies and garlic in oil until onion is tender.
- Add shrimp, lime peel, thyme, pepper and cinnamon; sauté until shrimp is barely cooked.
- Add grapes, lime juice and bottled hot pepper seasoning; mix well and remove from heat.
- Mix rice and chutney; season to taste with salt.
- Wrap tortillas in tightly in foil; heat at 350°F for 5 to 10 minutes. Spread tortilla out.
- Portion 1/4 of shrimp mixture and 1/2 cup rice mixture on one half of each tortilla. Fold sides in and roll.
