Caribbean Jerk Rubbed Tenderloin
Slow roasted beef tenderloin with a taste of the Caribbean
Ingredients
- 5 pound beef tenderloin
- 3 Tablespoons Caribbean Jerk Seasoning
- 1/4 cup olive oil
- 1/2 cup Teriyaki Sauce
Methods/steps
- Using a sharp knife removed the chain and outer layers of fat from the tenderloin
- Baste the meat first in the Teriyaki sauce (until absorbed) then rub the meat with olive oil. Roll the meat in the Jerk Seasoning.
- Let tenderloin stand for 20 minutes.
- Preheat oven to 400F. Place the tenderloin on a rack inside a roasting pan. Roast for 30 minutes or until done.

Rare - 140 degrees Med-rare - 145 degrees Medium - 160 degress Everything else is just burnt!
