Bean Caviar
Description
Having company? This is a very fast simple recipe for a healthy appetizer.
Ingredients
- 1 (15-ounce) can garbanzo beans, rinsed and drained
- 1 (15-ounce) can dark red kidney beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 cup frozen whole kernel corn, thawed
- 1 small red onion, finely chopped
- 2 (4.5-ounce) cans diced green chiles
- 1 (4-ounce) jar diced pimientos, drained
- 1 teaspoon grated lime rind
- 1/4 cup fresh lime juice
- teaspoon hot sauce
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
Methods/steps
- Mix all ingredients, cover and chill.
Serve with tortilla chips. I like the "scoops" kind.
