Apple and Sweet Pepper Slaw
Nice variation of traditional cole slaw. Yogurt replaces the mayo for a lower fat, healthier version
Ingredients
- 1/3 cup plain nonfat yogurt
- 1/4 of a 0.4-oz. pkg. buttermilk ranch salad dressing mix (about 1 teaspoon)
- 1 teaspoon honey
- 2 cups shredded cabbage
- 1 small red or green sweet pepper, cut into thin strips
- 1 carrot, shredded
- 1/4 cup thinly sliced celery
- 1 small apple, chopped
Methods/steps
- For dressing, in a small bowl stir together the yogurt or mayonnaise, dressing mix, and honey till blended. Thin with a little water if necessary. Cover; refrigerate till ready to serve.
- In a large bowl combine cabbage, sweet pepper, carrot, celery, and apple. To serve, pour chilled dressing over cabbage mixture. Toss to coat.
