African Vegetarian Stew
Description
Hearty, flavorful African vegetarian stew. You can substitute parsnips for the Kohlrabis.
Ingredients
- 4 small Kohlrabis peeled, cut into chunks
- 1 large Onion, chopped
- 2 Sweet potatoes,peeled & cut into chunks
- 2 Zucchini, sliced thick
- 5 Fresh tomatoes -- (or 16 oz can)
- 1 15 ounce can of garbanzo beans & liquid
- 1/2 cup Couscous (or bulgar wheat)
- 1/4 cup Raisins
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 teaspoon ground cumin
- 3 cups Water
Methods/steps
Combine all the ingredients in a large saucepan. Bring to a boil,
lower the heat, and simmer until the vegetables are tender, about 30 minutes.
Serve the couscous separately, if desired.
