Spicy and Sweet Peach Chicken

Description

Dinner party presentation with only 10 minutes of preparation!

  • 1 bag (1 pound) frozen peaches unthawed
  • 2 red onions half and slice
  • Coarse salt and ground pepper
  • 2 tablespoons grated fresh ginger
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon of olive oil
  • 1 tablespoon toasted sesame oil
  • ½ teaspoon red pepper flakes
  • 4 bone in skin on chicken breast (boneless if you prefer)


  • White rice perfect side dish.




Methods/steps
  • Preheat oven to 450 degrees.
  • Places peaches and onions on a baking sheet or 13x9 glass baking dish. (line it with heavy duty Reynolds Wrap for zero clean up!) Season with salt and pepper. Sprinkle the ginger and all the rest over the top. Toss to coat. Place chicken on top (if you using bone in place skin up)
  • Roast 25-30 minutes

Start the rice while chicken is roasting so it will be finished at the same time.

Rice to Perfection

  • 4 cups water
  • Sprinkle of salt
  • 1 Tablespoon of butter
  • Bring to a boil
  • Add 1 cup of rice
  • Lower heat simmer on very low for exactly 20 minutes….and never lift the lid!
  • Cut to 2 cups water, one cup rice for two people.
Additional Tips

When making for two use half of the bag of peaches and you will have the other half to have on hand for desserts or to make this recipe again!
