Gingered Sweet Potatoes
This recipe for Gingered Sweet Potatoes has become a family favorite. The garlic and ginger really compliment each other.
Ingredients

4 medium sweet potatoes peeled and chopped

6 Tablespoons butter

5 cloves of garlic chopped

2 Tablespoons of fresh ginger, finely chopped

2/3 cup heavy cream

salt and pepper
Methods/steps

Heat a small saucepan over medium heat. Add the butter, garlic and ginger. Saute until garlic is golden brown.

Meanwhile, combine the sweet potatoes in a large sauce pan with enough water to cover. Cook until fork tender. Drain.

Combine sweet potatoes and heavy cream in a food processor. Process until blended. Add the remaining ingredients and process until smooth

Add salt and pepper to taste.
Additional Tips
You can use a potato masher if you don't have or don't want to mess with a food processor. The texture is not as smooth but it still tastes great.
